A one pot meal of mutton pieces cooked with lentils.KHICHDAIngredients1 cup whole wheat (gehun), soaked for 12-15 hours and drained ¼ cup split Bengal gram (chana dal), soaked for 1 hour and drained¼ cup split green gram (moong dal), soaked for 1 hour and drained¼ cup split red lentils (masoor dal), soaked for 1 hour and drained¼ cup split pigeon peas (toovar dal), soaked for 1 hour and drained500 grams boneless mutton, cut into 1 inch pieces¼ cup + 1 tablespoon ghee 4 green chillies, slit2 medium onions, sliced1 tablespoon ginger-garlic paste½ teaspoon turmeric powder1 tablespoon red chilli powder1 tablespoon coriander powder1 tablespoon roasted cumin (jeera) powderSalt to taste¾ cup fried onions + for garnishing 1 tablespoon garam masala powder 3-4 tablespoons milk 2 tablespoons chopped fresh coriander leaves Lemon wedge for garnishingFresh coriander sprig for garnishing Method1. Heat ¼ cup ghee in a pressure cooker. Add green chillies, onions and ginger-garlic paste, mix well and sauté till onions are lightly browned. 2. Add mutton pieces and mix. Add turmeric powder, chilli powder, coriander powder, cumin powder and salt and mix well. 3. Add remaining ghee and mix. Add whole wheat, Bengal gram, green gram and red lentils and mix well. 4. Add fried onions, garam masala powder and 3 cups water and stir to mix. Cover and pressure cook on low heat for 5 minutes. 5. Add milk and mix. Add coriander leaves and mix well.6. Garnish with some fried onions, lemon wedge and coriander sprig and serve hot.
