Skip to recipe here: 7:03RECIPE!Zucchini Mushroom Filling:2 cups finely chopped crimini mushrooms2-3 cups finely chopped zucchini1 small shallot finely chopped (please leave out if you are not dehydrating this filling)3-5 finely chopped sundried tomatoesIn the vitamix, mix up 2 dates, 1 clove garlic, fresh oregano sprigs, smoked paprika, salt and pepper. Blend with 1/2-1 cup water and use to mix with all above ingredients. Place in dehydrator for 2-5 hours depending on how dried you want the filling to be. The more it dries, the stronger the flavours. Cashew topping:3/4 cup soaked cashews2 tbsp sesame seeds2 pitted dates1-2 cloves of garlicDash of cayenneSalt to taste1tbsp nutritional yeast 1/2 tsp Apple Cider Vinegar1/2 cup water to consistency Blend in the vitamix until smooth! Adjust spices as desired.Then chop a red pepper in half, fill with warm mushroom filling, top with chopped tomatoes, the cashew sauce and chopped green onions!
