For today's #NZLvSA match I've got for you a traditional South African sweet- Koeksister. Originating from the Dutch who stayed in #SA, it is a sweet bread in which the dough is braided, fried and infused in syrup or honey. #WorldCricEAT #CWC19 KOEKSISTERSIngredients1½ cups refined flour (maida)½ cup corn meal2½ tsps baking powder¾ tsp salt2 tbsps castor sugar1 egg½ cup milk2 tbsps butter 2 cups sugar1 cup water1 inch cinnamon stick1 inch ginger, finely chopped½ lemonOil for greasing + deep fryingMethod1. In a large bowl, add flour and corn meal. Add baking powder, salt and castor sugar. Whisk well.2. Break in the egg in the centre, add milk and knead well. Add 2-3 tbsps water and knead to a soft dough.3. Add butter and knead again, cover with a damp muslin cloth and set aside for 30 minutes. 4. Meanwhile, heat sugar and water in a deep pan. Add cinnamon, ginger and squeeze lemon. Discard the scum and stir till the sugar dissolves. Cook till it reaches one string consistency.5. Strain into a bowl and refrigerate till chilled.6. To make one koeksister, take 3 small equal portions of the dough and shape them into thin long cylinders, braid them together and pinch both ends to seal.7. Heat sufficient oil in a kadai, gently drop in the prepared braided dough and deep fry till golden brown and crisp. Drain on an absorbent paper.8. Dip the prepared koeksisters while they are hot into the cold sugar syrup. Drain them and place them on a cooling rack.9.
