Mutton pieces cooked in freshly ground spicy coconut masala. Mrs Alyona Kapoor shares her favourite recipe of Kolhapuri Sukka Mutton.KOLHAPURI SUKHA MUTTON Ingredients 1 kg Mutton on the bone, cut into medium sized piecesSalt to taste ½ tsp turmeric½ cup dry coconut, grated2-3 medium onions, sliced1-2 tbsp oil2 medium onions, chopped1 tbsps ginger garlic paste2 medium tomatoes, chopped1 tsp red chilli powder¼ tsp green cardamom powder½ tsp garam masala powderMethod1. Marinate the mutton with salt and turmeric. Heat a pressure cooker and sear the marinated mutton pieces for 2-3 minutes. Add ¼ cup water and pressure cook it till 4-5 whistles or till the mutton is well cooked.2. Dry roast coconut in a nonstick pan till it is light brown in colour. Transfer into a bowl. Add onions to the same pan and cook them till light brown. Once cooled, grind the onions and coconut to a fine paste. Add water if required.3. Heat oil in a deep non-stick pan. Add chopped onions and sauté till golden brown. Add ginger-garlic paste, chopped tomatoes and sauté for 4-5 minutes. Add red chilli powder, coconut-onion paste, salt and sauté well.4. Add the cooked mutton, mix and cover and cook for 4-5 minutes. 5. Add cardamom powder, garam masala and mix well.6. Serve hot.
