Kolkata Chowmein Street Food Recipe Chef Harpal Singh

#Kolkatachowmein is a version of chowmein is popular in roadside stalls across Calcutta, with vendors adding their own spices to the mix. This Kolkata Style Chowmein with egg is the perfect fix for a bored tongue.

Ingredients Quantity
Noodles (Boiled) 150 gm.
Eggs 2.
Ginger chopped 1 tsp
Garlic chopped 1 tsp
Onions slice 1.
Cabbage shredded 1 cup
Green Capsicum julienne 1.
Carrot Juliennes 1.
Fennel Powder tsp
Coriander Powder 1 tbsp
Cumin Powder tsp
Soya Sauce 1 tbsp
Vinegar 1 tbsp
Red Chilli Sauce 2 tbsp
Green Chilli Sauce 1 tbsp
Assorted Bell pepper julienne for garnish
Salt to taste
Oil for cooking.

Method:-
1. Heat 1 tbsp of oil in a pan, break eggs in pan, add salt, mix well and cook for a minute. Remove it in a plate and keep it aside.
2. In same pan, heat 1 tbsp of oil, add chopped ginger, chopped garlic, mix well and saut for 30 seconds.
3. Add onion, mix well and saut for 1 min.
4. Add capsicum, cabbage, carrot, mix well and saut for 1 min.
5. Add boiled noodles, salt, fennel powder, coriander powder, cumin powder, mix well.
6. Add soya sauce, vinegar, red chilli sauce, green chilli sauce, mix well and tossed for 1 min.
7. Add prepared eggs and mix well.
8. Remove in serving bowl; garnish it with assorted bell pepper and Serve hot.
