This is a special Prawn curry from the Parsi cuisine and is a hit with everybody because of it's rich flavors and delicious taste. KOLMI NA PATIO Ingredients20-25 medium prawns, cleaned, deveined and washed2 tbsps oil2 medium onions, finely chopped½ tbsp ginger-garlic paste1 tbsp red chilli paste1 tsp red chilli powder1½ tsps coriander powder¾ tsp cumin powder½ tsp turmeric powder2 tsp garam masala powder 1 large tomato, choppedSalt to taste1 cup prawns stock1 tsp tamarind pulp1 tsp chopped jaggery1½ tbsps chopped fresh coriander leaves Fresh coriander sprig for garnishBoiled red rice to serve Method1. Heat oil in a non-stick wok, add onions and sauté till golden brown. Add ginger-garlic paste and red chilli paste and mix well. Cook for 1-2 minutes.2. Add red chilli powder, coriander powder, cumin powder, turmeric powder, garam masala powder and mix well. Cook for 1 minute.3. Add tomato and mix. Add salt, mix and cook till the tomato is soft and pulpy.4. Add prawns and mix till well combined, cook for 1 minute. Add prawns stock and mix well. Cover and cook for 5-6 minutes.5. Add tamarind pulp, jaggery and chopped coriander and mix well. Take the pan off the heat.6.
