This is a special Prawn curry from the Parsi cuisine and is a hit with everybody because of it's rich flavors and delicious taste.

KOLMI NA PATIO

Ingredients

20-25 medium prawns, cleaned, deveined and washed
2 tbsps oil
2 medium onions, finely chopped
½ tbsp ginger-garlic paste
1 tbsp red chilli paste
1 tsp red chilli powder
1½ tsps coriander powder
¾ tsp cumin powder
½ tsp turmeric powder
2 tsp garam masala powder
1 large tomato, chopped
Salt to taste
1 cup prawns stock
1 tsp tamarind pulp
1 tsp chopped jaggery
1½ tbsps chopped fresh coriander leaves
Fresh coriander sprig for garnish
Boiled red rice to serve

Method

1. Heat oil in a non-stick wok, add onions and sauté till golden brown. Add ginger-garlic paste and red chilli paste and mix well. Cook for 1-2 minutes.
2. Add red chilli powder, coriander powder, cumin powder, turmeric powder, garam masala powder and mix well. Cook for 1 minute.
3. Add tomato and mix. Add salt, mix and cook till the tomato is soft and pulpy.
4. Add prawns and mix till well combined, cook for 1 minute. Add prawns stock and mix well. Cover and cook for 5-6 minutes.
5. Add tamarind pulp, jaggery and chopped coriander and mix well. Take the pan off the heat.
6. Transfer the prepared gravy into a serving bowl, garnish with coriander sprig and serve hot with boiled red rice.
