An easy one pot meal of tender chicken, thick milky porridge, and soft chestnuts, ginseng, and dates. {Called Sam-gye-tang in Korean}Ingredients:1 cornish hen1/2 c sweet rice2 dried ginseng3 chestnuts4 red dates {jujubes}Water1 chopped green onionOptional: stock, garlic, and onionsInstructionsSoak the sweet rice, ginseng, chestnuts and dates for about an hour.Clean/rinse/trim your cornish hen.Fill the hen with the soaked/drained ingredients.Close up the hen and tie up the legs (if you'd like).Tuck the hen into a small/medium pot and cover with water and put in any leftover rice, ginseng, chestnuts or dates.Simmer for one hour.
