Bengali-style Mutton and potato curry cooked in mustard oil.KOSHA MANGSHOIngredients750 grams mutton on bone, cut into 2 inch pieces1 tsp cumin powder1 tsp coriander powder1 tsp red chilli powder½ tsp turmeric powder1½ tsps ginger-garlic pasteSalt to taste1½ tbsp mustard oil2 medium potatoes, peeled and quatered2 medium onions, chopped2 slit green chillies1½ cups fresh tomato pureeCoriander sprig for garnishServe hot with parathaMethod1. Add mutton, cumin powder, coriander powder, red chilli powder, turmeric powder, ginger-garlic paste and salt. Mix well and set aside to marinate for 2-3 hours.2. Heat mustard oil in a non-stick deep pan, add potatoes and sauté till lightly golden. Remove in a bowl and set aside.3. Add onion and sauté till it turns golden brown. Add green chillies and sauté for a minute on medium heat. Add the marinated mutton and mix well. Cook for a few minutes on medium heat. 4. Add tomato puree and cook on medium heat till oil separates. Cover and cook for 10-12 minutes on medium heat, stirring occasionally.5. Add fried potatoes and sufficient water. Mix well. Cover and cook for 7-8 minutes on medium heat. 6. Open lid and cook for another 2-3 minutes on medium heat. 7. Transfer on a serving bowl. 8.
