Bengali-style Mutton and potato curry cooked in mustard oil.

KOSHA MANGSHO

Ingredients

750 grams mutton on bone, cut into 2 inch pieces
1 tsp cumin powder
1 tsp coriander powder
1 tsp red chilli powder
½ tsp turmeric powder
1½ tsps ginger-garlic paste
Salt to taste
1½ tbsp mustard oil
2 medium potatoes, peeled and quatered
2 medium onions, chopped
2 slit green chillies
1½ cups fresh tomato puree
Coriander sprig for garnish
Serve hot with paratha

Method

1. Add mutton, cumin powder, coriander powder, red chilli powder, turmeric powder, ginger-garlic paste and salt. Mix well and set aside to marinate for 2-3 hours.
2. Heat mustard oil in a non-stick deep pan, add potatoes and sauté till lightly golden. Remove in a bowl and set aside.
3. Add onion and sauté till it turns golden brown. Add green chillies and sauté for a minute on medium heat. Add the marinated mutton and mix well. Cook for a few minutes on medium heat.
4. Add tomato puree and cook on medium heat till oil separates. Cover and cook for 10-12 minutes on medium heat, stirring occasionally.
5. Add fried potatoes and sufficient water. Mix well. Cover and cook for 7-8 minutes on medium heat.
6. Open lid and cook for another 2-3 minutes on medium heat.
7. Transfer on a serving bowl.
8. Serve hot with paratha, garnished with coriander sprig
