Kothu Parotta/Minced Parotta | Indian Mom's Kitchen

Let me show you how you can make this popular South Indian street food at home with Parottas (Parathas). It can also be made with chapattis.

Ingredients:
5 Parottas (shredded)
250 gms Chicken
2 Onions (sliced)
2 Green Chillies (chopped)
2 Tomatoes (chopped)
1/2 tsp Mustard seeds
1/2 tsp Cumin
Curry leaves
1 tsp Ginger Garlic paste
3 Eggs
1 tbsp Lime juice
Coriander leaves
1 tsp Red Chilli powder
1/2 tsp Coriander powder
1/4 tsp Turmeric
3/4 tsp Garam masala
2 tbsp Oil
Salt to taste
Method: Cook Boneless Chicken with salt. Cool, shred and keep aside. Shred Parottas into thin strips. Heat oil and put in Mustard, Cumin, Green Chillies, Ginger Garlic paste, sliced Onions, Curry leaves and Salt. Saute till Onions turn golden brown. Put in the Tomatoes and saute for 2 minutes. Add Red Chilli, Coriander, Turmeric and Garam masala powder and mix well. Add 1/4 cup of water and allow the gravy to thicken. Put in the shredded Chicken and Lime juice. Mix well. Add 3 Eggs. Combine well for 2 minutes. Finally, add shredded Parottas and mix well till everything is well combined. Garnish with Coriander leaves. Kothu Parotta is ready. Serve hot.
