A soft textured Indian bread that goes well with almost anything .

KULCHA

Ingredients

1½ cups refined flour (maida)
Salt to taste
½ teaspoon baking powder
½ teaspoon castor sugar
1 tablespoon melted butter + for basting
¼ cup milk
2 tablespoons onion seeds (kalonji)

Method

1. Sift together refined flour, salt, baking powder through a sieve in a bowl.
2. Add castor sugar, butter and milk, mix well and knead into soft dough with water as required.
3. Cover with a muslin cloth and set aside for 40 minutes.
4. Preheat oven to 200˚C.
5. Divide the dough into 4 equal portions and roll out into kulchas using a rolling pin.
6. Transfer kulchas to a baking tray, baste with butter and sprinkle onion seeds over the kulchas.
7. Put the tray in the preheated oven and bake for 8 minutes, basting with butter after 2-3 minutes.
8. Serve hot with jeera aloo.
