Kulthacha Pithla Maharashtrian Recipe Sanjeev Kapoor Khazana

What can be better than a simple, tasty comfort food made using horse gram flour, which is also super healthy? Pair this cozy Maharashtrian dish with some bhakri and thecha on the side.

KULTHACHA PITHLA

Ingredients

1 cup roasted horse gram (kulith) flour
tsp turmeric powder
Salt to taste
2 tbsps oil
1 tsp mustard seeds
1 tsp cumin seeds
10-12 garlic cloves, coarsely crushed
1 medium onion, finely chopped
2-3 green chillies, coarsely crushed
tsp red chilli powder
tsp turmeric powder
1-2 sprigs of curry leaves
4-5 kokum petals
2 tbsps chopped fresh coriander leaves
Fresh coriander sprig for garnish
Steamed rice to serve

Method

1. Take horse gram flour in a large bowl. Add turmeric powder, salt and 1 cup water and mix till a smooth lump free mixture is formed.
2. Heat oil in a kadai Add mustard seeds and let them splutter. Add cumin seeds and let them change colour.
3. Add garlic and mix well. Cook for 1-2 minutes. Add onion and saut till translucent.
4. Add green chillies, red chilli powder, turmeric powder and curry leaves and mix well. Cook for 1 minute.
5. Stir in cup water, cook till it comes to a boil. Add the horse gram mixture and continuously stir and cook for a few seconds.
6. Add kokum petals, adjust salt, pour 2 cups water and mix well. Cook on medium heat for 3-4 minutes.
7. Add coriander leaves and mix well.
8. Transfer into a serving bowl, garnish with coriander sprig and serve hot with steamed rice.
