Kumbh Shashlik | Simple Vegetarian Khana With Chef Saurabh | Sanjeev Kapoor Khazana

Kumbh Shaslik are savory-rich mushrooms that are marinated and barbecued. This healthy version is fabulous as an appetizer, side dish, or snack.

KUMBH SHASHLIK

Ingredients

10-12 button mushrooms (kumbh)
¼ cup hung yogurt
2 teaspoons ginger-garlic paste
1 teaspoon red chilli powder
½ teaspoon garam masala powder
Juice of ½ lemon
¼ teaspoon dried fenugreek leaves powder (kasuri methi)
Salt to taste
2 teaspoons mustard oil
1½ tablespoons gram flour (besan)
2 medium onions, cut into 1 inch cubes ad layers separated
2 medium tomatoes, deseeded and cut into 1 inch cubes
2 medium green capsicums, deseeded and cut into 1 inch cubes
Oil for greasing
Butter for basting
Yogurt onion rings for serving

Method

1. Preheat oven to 180° C.
2. Discard the stems from the mushrooms and transfer in a bowl.
3. To prepare marinade, combine hung yogurt, ginger-garlic paste, chilli powder, garam masala powder, lemon juice, dried fenugreek leaves powder, salt, mustard oil and gram flour in a bowl and whisk well.
4. Add mushrooms, onion cubes, tomato cubes and capsicum cubes to the marinade and mix well. Refrigerate to marinate for 40-45 minutes.
5. Grease a baking tray with some oil.
6. Insert one marinated capsicum cube, mushroom, onion cube, mushroom and tomato cube in each satay stick.
7. Place the prepare satay sticks on the greased tray. Put the tray into the preheated oven and bake for 5-7 minutes, basting with some butter.
8. Serve hot with yogurt onion rings.
