Ingredients-
• 2cup potatoes, peeled and cubed
• 2cups pumpkin , peeled and cubed
• 1cup black chickpeas soaked
overnight
• A pinch of asafoetida/hinge
• 1tsp turmeric powder
• 1tsp red chilli powder
• 1tsp ginger paste
• 2whole green chillies- slotted
• 2dry red chillies
• 1tsp panch foron/mixture of cumin
seeds, mustard seeds, kale jeera/ nigella seeds, fennel seeds and fenugreek seeds
• Coriander leaves to garnish
• 4 tbs mustard oil
• Sugar and salt to taste

Method-
1. Boil the soaked black chickpeas in water with some salt , until they become soft from inside.
2. Heat oil in pan and add panch foron ,Hing, green chillies and dry red chillies and let the spices sizzle.
3. Add the cubed potatoes. Add salt and turmeric. Cover and cook till the potatoes are half done.
4. Add the pumpkin, ginger paste, red chili powder and turmeric powder. Mix well and cover and cook till the pumpkin start to soften, and Add the boiled black chickpeas/garbanzo beans.
5. Cook till the Veggies are completely done. Add salt and sugar to taste. Add coriander leaves to garnish
