Ingredients

For Quick Kung Pao Potatoes
3 cups frozen french fries
2 tbsp oil
3/4 cup chopped spring onions whites and greens
2 tsp finely chopped garlic (lehsun)
1 tsp finely chopped ginger (adrak)
1/4 cup schezwan sauce
1 tbsp red chilli sauce
1 tsp soy sauce
2 tbsp hot and sweet chilli sauce
salt to taste
oil for deep-frying

For The Garnish
1 tbsp chopped spring onions whites and greens
1 tsp black sesame seeds (kala til)
Method

For quick kung pao potatoes
To make quick kung pao potatoes, heat the oil for deep frying in a deep pan and deep-fry the french fries till golden brown in colour. Drain on an absorbent paper. Keep aside.
Heat the oil in a broad non-stick pan, add the garlic and ginger and saut on a medium flame for a few seconds.
Add the spring onion whites and greens and saut on a medium flame for 1 minute.
Add the schezuan sauce, red chilli sauce, soy sauce, hot and sweet sauce and salt, mix well and cook on a medium flame for 1 minute.
Add the deep-fried french fries, mix gently and cook on a medium flame for 2 minutes.
Serve the quick kung pao potatoes immediately garnished with spring onions and black sesame seeds.
