Kurdu is a name of the forest plant of which the tender leaves are used by tribal in forests in Maharashtra state during monsoon.it grows abundantly wild in monsoons. its use as a vegetable is common in some parts of Maharashtra. botanically it is known as celosia argentia. this plant is usually grown on marshy places and on non-usable lands as weed. the tender leaves are used as vegetable while leaves and seeds are of medicinal value.#KurduBhaji #ForestFood #NaturalFood #ChefHarpalSingh #TribalRecipeKurdu chi bhaji / Raan Bhaji | Celosia Argentia Recipe Preparation time : 10 mins Cooking time : 25-30 mins serving 4 pax Ingredients Quantity oil 2-3 tbsp Asafoetida a pinch Cumin seed 1 tsp Mustard seed 1 tsp Red chilli dry 2 nos Ginger chopped 1 ½ tbsp Garlic chopped 1 ½ tbsp Green chilli chopped 4-5 nos Onion chopped 2 nos Kurdu leaves 4 bunch Yellow moong dal soaked 1 cup Salt to taste Turmeric powder 1 ½ tsp Red chilli powder 2 tsp Dry mango powder 1 ½ tsp Coriander powder 3 tsp Fresh coconut grated(optional) ¼ cup + for garnish Roasted peanut 2 tbsp Method : 1. Wash and rinse the kuradu bunch , keep it aside . 2. Fetch-out the leaves from the stem and keep it apart . 3. Heat a kadhai , add oil , asafoetida, cumin seed , mustard seed , dry red chilli , allow it to splutter. 4. Now add ginger , garlic and sauté it nicely on low flame for 30 seconds . 5. Now add green chilli , onions sauté it for 3-4 mins until its translucent 6. Now add kuradu leaves , compress and mix it well slowly . 7. Now add moong dal , salt , turmeric powder , red chilli powder , dry mango powder , coriander powder and mix it well for 30 seconds . 8. Close with the lid and cook it for 15-20 mins on low flame, stir occasionally . 9. Now add grated coconut , roasted peanuts and mix it well . 10. Transfer it to serving bowl , garnish with grated coconut . 11.
