Kurkuri laddu peethi
Ingredients for Laddu Peethi:
Split chickpeas (daal chana) 2 cups
Water (for soaking) as required
White lentil (mash daal) 1/2 cup
Water (for soaking) as required
Salt 1 tsp
Baking soda 1/2 tsp
Cumin powder 1 tsp
Red chili powder 1 tsp
Water 1/2 cup

Ingredients for Green chutney:
Green coriander 1 cup
Green chilies 3-4
Mint leaves 1/4 cup
Vinegar 2 tbsp
Water as required
Salt to taste

Ingredients for Tamarind Sauce:
Tamarind (Imli) pulp 1 cup
Red Chili flakes 1 tbsp
Sugar 1 tsp
Salt 1/2 tsp
Mint leaves 1/4 cup
Cumin powder 1 tsp
Lemon juice 1 tbsp

Ingredients for Apricot Sauce:
Apricot (soaked) 2 cups
Sugar 2 tbsp
Water as required
Cumin powder 1 tsp
Red chili powder 1 tsp
Salt 1/2 tsp

Ingredients for Assembling:
Laddu Peethi as required
White radish (shredded) as required
Tamarind sauce as required
Green chutney as required
Apricot sauce as required
Kurkure as required

Directions for Laddu Peethi Preparation:
1. In separate bowls, soak split chickpeas and white lentils overnight.
2. In a blender add soaked lentils and water. Blend them well to form paste.
3. Transfer the lentil paste in a bowl and add red chili powder, salt, baking soda, cumin powder and mix it well.
4. In a pan heat oil and add the prepared mixture with the help of spoon. Fry on low medium flame until light golden in color. Take off flame and set aside.
Directions for Green Chutney Preparation:
5. In a blender add coriander, green chilies, mint leaves, vinegar, water, salt and blend well. Green chutney is ready.
Directions for Tamarind Sauce:
6. In a blender add tamarind pulp, red chili flakes, sugar, salt, mint leaves, cumin powder, lemon juice and blend well. Your tamarind sauce is ready.
Directions for Apricot Sauce:
7. In a blender add soaked apricot and water. Blend it well and apricot pulp.
8. Transfer this apricot pulp on a pan and heat it on low medium flame. Add sugar, water, cumin powder, red chili powder, salt and let it cook for 4-5 minutes.
Directions for Assembling:
9. On a plat add prepared laddu peethi, white radish, drizzle tamaring sauce, green chutney, apricot sauce and at last top it with Kurkure.
10. Your KurKuri Laddu Peethi is ready.

Cooking time: 20-25 mins
