Kurkuri bhindi

2 cups ladies finger (bhindi), cut into four lengthwise
3 tbsp besan (bengal gram flour)
1 tbsp rice flour
1/4 tsp turmeric powder (haldi)
1 tsp chilli powder
tsp amchur powder
tsp cumin powder
1 tsp lemon juice
2 tbsp oil
Salt to taste

1. To make kurkuri bhindi, combine all the dry ingredients in a bowl, add 3 tbsp water and mix well.
2. Now add bhindi and salt. Mix well using hands.
3. Arrange them on a baking tray lined with parchment paper.
4. Bake in a pre-heated oven at 180C for 20 minutes till they turn crisp and golden brown in colour.
5. Remove and let it cool slightly.
6. Serve kurkuri bhindi immediately with hot cup of tea.
Tips to make kurkuri bhindi
1. Instead of refined oil you can use olive oil.
2. Make sure the masala is evenly coated to the bhindi.
3. Remember the bhindi should be completely dry before adding it to the masala.
