These crispy yet moist mutton cutlets is worth trying !

LACY MUTTON CUTLETS

Ingredients

450 grams mutton mince
1-2 green chillies, finely chopped
1 teaspoon red chilli powder
1½ teaspoons coriander powder
1 teaspoon cumin powder
¼ teaspoon turmeric powder
1 tablespoon ginger-garlic paste
¼ cup fried onions
Salt to taste
2 medium potatoes, boiled, peeled and grated
2 tablespoons chopped fresh coriander leaves
½ cup semolina (rawa/suji)
2 eggs
Oil for shallow-frying
Tomato ketchup for serving

Method

1. Mix together mutton mince, green chillies, chilli powder, coriander powder, cumin powder, turmeric powder, ginger-garlic paste, fried onions, salt, potatoes and coriander leaves in a bowl.
2. Spread semolina on a plate. Add salt and mix well.
3. Break eggs in a shallow-plate. Add salt and beat. Add 2-3 tablespoons water and beat well.
4. Divide the mutton mixture into equal portions, shape into ½ cm thick cutlets and coat with semolina.
5. Heat some oil in a non-stick pan.
6. Dip each cutlet in beaten egg, put in hot oil and shallow-fry from both sides till golden brown. Transfer on another plate.
7. Serve hot with tomato ketchup.
