These crispy yet moist mutton cutlets is worth trying !LACY MUTTON CUTLETSIngredients450 grams mutton mince 1-2 green chillies, finely chopped1 teaspoon red chilli powder1½ teaspoons coriander powder1 teaspoon cumin powder¼ teaspoon turmeric powder1 tablespoon ginger-garlic paste ¼ cup fried onions Salt to taste 2 medium potatoes, boiled, peeled and grated 2 tablespoons chopped fresh coriander leaves½ cup semolina (rawa/suji)2 eggsOil for shallow-fryingTomato ketchup for servingMethod1. Mix together mutton mince, green chillies, chilli powder, coriander powder, cumin powder, turmeric powder, ginger-garlic paste, fried onions, salt, potatoes and coriander leaves in a bowl.2. Spread semolina on a plate. Add salt and mix well. 3. Break eggs in a shallow-plate. Add salt and beat. Add 2-3 tablespoons water and beat well.4. Divide the mutton mixture into equal portions, shape into ½ cm thick cutlets and coat with semolina. 5. Heat some oil in a non-stick pan. 6. Dip each cutlet in beaten egg, put in hot oil and shallow-fry from both sides till golden brown. Transfer on another plate.7.
