Ground turkey Bolognese stuffed into bell peppers with gooey cheese makes for a great comfort food dish, and it's easy enough to make on a weeknight.INGREDIENTS:4 Bell peppers with the tops cut off and de-seeded1 pound ground turkey, pan fried1 jar marinara sauceFresh lasagna sheets1 cup pine nuts2 cups ricotta cheeseParmesan Cheese gratedBasil for garnishSTEPS: 1.) Preheat you oven to 425. Slice off a small amount off the bottom of each pepper, without creating a hole, to ensure it lies flat. 2.) Place in an oven-proof pan.3.) In a small bowl, combine ground turkey with marinara sauce.4.) Cut the pasta into pepper-sized circles. In each pepper, place a spoon of Bolognese, a sprinkle of fresh basil, a sprinkle of pine nuts, then a spoon of ricotta and a small sprinkle of parmesan. Repeat until full.5.)
