Today I am sharing a summer special pickle recipe which is very tasty - Labere Ka Achar. Gunde Ka Achar, Lasode Ka Achar, Rajasthani Leswa/Gondi Pickle.

Lasode is called by different names. Gunda is a kind of berry with a very sticky stone in the middle and is available from March to June. It has anti-diabetic properties also. Its very easy to prepare this pickle. Only this is completely immersed the pickle in oil to preserve them for a long time. It tastes great with roti, paratha or any meal.

INGREDIENTS:
* Water(पानी)
* Turmeric Powder(हल्दी पाउडर) - 1/4 Tsp
* Gunda (लबेड़े, गोंदा) - 1.5 Kg
* Mustard Oil(सरसों का तेल) - 1 to 1.5 Cup
* Thick Fennel Seeds(मोटी सौंफ) - 4 Tbsp
* Fenugreek Seeds(मेथी दाना) - 1 Tsp
* Red Mustard Seeds(लाल राई) - 2 Tbsp
* Asafoetida/Hing Powder(हींग) - 1 Tsp
* Kashmiri Red Chili Powder(कश्मीरी लाल मिर्च पाउडर) - 2-3 Tbsp
* Turmeric Powder(हल्दी पाउडर) - 1 Tbsp
* Crushed Red Chili Powder(कुटी लाल मिर्च पाउडर) - 1 Tbsp
* Dried Mango Powder(अमचूर पाउडर) - 1 Tbsp
* Salt(नमक) - 2 Tsp

RECIPE:
1. Wash lasoda well and remove the stalk but keep the cap on.
2. Take enough water in a vessel, add turmeric powder. Keep it to boil so that the Lasodas can be submerged in the water properly. Boil till they get 50% soft. Then Switch off the fire & drain all the water & keep it under the fan for 1 to 1.5 hours & then remove its peels cap.
3. Keep the pan for heating and dry roast some Fenugreek Seeds and mustard seeds. Take them out on a plate. Grind both separately & take it out on a plate.
4. In a bowl, take heated and cool mustard oil. Add in all spices along with crushed masala. Mix lasode well with the masala. Transfer in a dry glass jar & keep it for 2 to 4 days for fermentation. The Pickle is ready and enjoy the tasty Gunda/Lasoda/Labere Pickle for a long time.
