Lasooni Murgh Chicken Recipe Sanjeev Kapoor Khazana

LASOONI MURGH

Ingredients

2 tbsps garlic (lasoon) paste
1 tbsp fried garlic (lasoon) + for garnish
750 grams chicken, cut into 2-inch pieces on the bone
cup yogurt
1 tsps coriander powder
1 tsps cumin powder
Salt to taste
1 tbsp lemon juice
2 tbsps mustard oil
1 tbsp butter
2 medium onions, chopped
1 tbsp ginger paste
2 medium tomatoes, chopped
1 tbsp red chilli paste
tsp turmeric powder
tsp red chilli powder
1 tsp garam masala powder
2-3 green chillies, chopped
2-3 tbsps chopped fresh coriander leaves
Fresh coriander sprig for garnish
Paranthas for serving

Method

1. Take chicken in a bowl. Add yogurt, 1 tsp coriander powder, 1 tsp cumin powder, garlic paste, salt and lemon juice and mix well. Set aside to marinate for 15-20 minutes.
2. Heat mustard oil in a pan. Once it starts to smoke , add butter, onions and saut till golden brown.
3. Add ginger paste, remaining garlic paste and saut for a minute.
4. Add tomatoes and cook till soft and pulpy.
5. Add red chilli paste and saut for 2-3 minutes.
6. Add turmeric powder, red chilli powder, garam masala powder, remaining cumin powder and remaining coriander powder and mix well.
7. Add marinated chicken and saut on high heat for 5-6 minutes.
8. Add 1 cup water, green chillies and mix well. Cover and cook on medium heat for 8-10 minutes.
9. Add fried garlic, coriander leaves and mix well.
10. Transfer into a serving bowl, sprinkle fried garlic, garnish with coriander sprig and serve hot with paranthas.
