LAUKI SOYA NUGGETS STIR FRY | Vahchef - VahRehVah

This is a protein rich, butter fry recipe with soya granules, bottlegourd, potato, besan and dil leaves. Soya chunks are meaty in texture and its quick to cook where the protein content is equal to meat. Mixed Lauki/bottle gourd with soya as it would provide nutrition from two main foods. A very special snack recipe for vegeterians.

Ingredients:
Soya Granules 200 Grams
Green Chillies, chopped 3-4 Numbers
Salt 1 0
Bottle gourd, finely chopped 1 Cup
Potato, boiled & grated 1 Cup
Chickpea flour 2-3 Tablespoons
Oil for deep frying 2-3 Cup
Butter 1 Tablespoons
Garlic, chopped 1 Teaspoons
Ginger, chopped 1 Teaspoons
Onions, chopped 1 Numbers
Dill leaves, finely chopped 1 Bunch
Tomatoes, chopped 1-2 Numbers
Turmeric powder 1?4 Teaspoons
Coriander powder 1?2 Teaspoons
Cumin powder 1?2 Teaspoons
Red Chilli powder 1 Teaspoons
Garam masala powder 1 Pinch
Lime juice 1 Numbers

Directions:
1. Soak soya granules in water for few minutes and then squeeze and put the granules in a bowl.
2. Add chopped green chillies, salt, finely chopped bottle gourd, boiled and grated potato and mix well.
3. Add some chickpea flour and mix well. Take some mixture and shape them into small patty or nugget shape. Make all the nuggets and keep aside.
4. Heat oil in a kadai, drop the nuggets one by one in the hot oil and fry until crisp and golden in color.
5. For making the butter sauce; in a pan, add some chopped garlic, ginger and onions. salt and then add some butter. salt the ingredients well.
6. While the butter is melting, add in some finely chopped dill or soya leaves, little tomatoes pieces and cook well till the tomatoes are mashed.
7. Add some turmeric powder, chilli powder, coriander powder, cumin powder and very little of garam masala. Mix all ingredients and add in the fried soya nuggets and toss well.
8. Add some lime juice over the fried nuggets, toss again and serve hot.
