A delicious snack made using leftover cooked rice.LEFTOVER RICE TIKKIIngredients1½ cups leftover cooked rice3 tbsps oil2 green chillies chopped1 large onion, chopped1 medium carrot, grated¼ cup chopped French beans3 tbsps boiled and mashed green peasSalt to taste1½ tbsps semolina1 tsp red chilli powder½ tsp garam masala powderTomato ketchup to serveMethod1. Heat 1 tbsp oil in a non-stick pan, add green chillies and onion. Sauté till onion turns translucent.2. Add carrot, French beans, green peas and salt. Mix well. Sauté for 2-3 minutes on medium heat.3. Take leftover rice in a bowl. Add the cooked mixture and mix well. Add semolina, salt, red chilli powder and garam masala powder. Mix well. Divide mixture into equal portions and shape each portion into medium sized tikkis.4. Heat remaining oil in a non-stick tawa, add tikkis and shallow fry on medium heat till golden brown on both sides.5.
