LEHSUN KI SABJI

Ingredients

1 cup garlic cloves, peeled
2 tbsps mustard oil
1 tsp cumin seeds
1 medium onion, chopped
1 medium tomatoes, finely chopped
1 green chilli, chopped
Salt to taste
½ tsp turmeric powder
1 tsp red chilli powder
2 tsps coriander powder
Chopped fresh coriander leaves for garnish


Method

1. Heat 1 tbsp mustard oil in a non-stick pan, let it smoke. Add garlic cloves and sauté well till golden brown. Take it off the flame and keep aside.
2. Heat remaining oil in another non-stick pan, let it smoke. Add cumin seeds and let them change colour. Add onion and sauté till translucent. Add tomatoes and green chilli, cook till tomatoes are pulpy.
3. Add salt, turmeric powder, red chilli powder, coriander powder, and a little water, mix well. Cook for 3-4 minutes on medium flame.
4. Add the cooked garlic and mix well. Cook for 2-3 minutes.
5. Transfer to a serving bowl, garnish with coriander leaves and serve hot.
