A wholesome dish by itself that includes potatoes, chicken and lots of fresh vegetables. The tangy lemony flavour adds to it.LEMON BAKED CHICKENIngredients2 lemons750 gms chicken on bone, cut into pieces2 tsps + 2 tbsps extra virgin olive oil + for greasing3 medium potatoes, peeledSalt to taste1 medium red capsicum1 medium green capsicumJuice of 1 lemon9-10 garlic cloves1 tbsp green chilli sauce1 tsp ginger-garlic paste1½ tsps black pepper powder Salad leaves for servingMethod1. Grease a baking dish with some olive oil.2. Slice potatoes and place in the greased dish. Sprinkle salt and drizzle 2 tsps olive oil on top. Put dish in the oven and bake at 180ºC for 15 minutes.3. Deseed red and green capsicum and roughly chop them. Place these in a bowl.4. Cut lemons into thin wedges.5. Add lemon juice, garlic cloves, chicken, green chilli sauce, ginger-garlic paste, salt, pepper powder and lemon wedges in the bowl. Mix well. Add 2 tbsps olive oil, mix well and set aside to marinate for 2 hours.6. Take out the baking dish with potatoes and place the marinated chicken alongwith lemon and vegetables on top. Place the dish back in the oven and bake at 180ºC for 1 hour 15 minutes.7. Serve hot on a bed of salad leaves.
