LEMON CHILLI FISH WITH KURMURAIngredients2 basa fish fillets, cut into 1 inch pieces Juice of 1 lemon3-4 green chillies 2 cups puffed rice (kurmura)2-3 tsps + 2 tbsps oil1 medium onion, finely chopped¼ tsp turmeric powder1 tsp red chilli powder Salt to taste 15-18 curry leaves 1 medium red capsicum 1 tsp coriander powder2-3 tsps castor sugarMicro shoots for garnishingMethod1. Heat 2-3 tsps oil in a non-stick pan. 2. Heat 2 tbsps oil in another non-stick pan, add onion and sauté till lightly browned. 3. Finely chop green chillies. 4. Add turmeric powder and red chilli powder to the first pan. Add puffed rice and salt and mix well. 5. Add curry leaves to the onion in the second pan and mix well. Add green chillies and mix well. 6. Roughly chop red capsicum and add to the first pan. 7. Add salt and coriander powder to the second pan and mix well. Add fish pieces and lemon juice and mix well. Cover and cook till the fish is done. 8. Add castor sugar to the puffed rice and mix well. 9. Remove the lid on the second pan and mix well. 10. Put half the puffed rice mixture on a serving plate, top with cooked fish, cover with remaining puffed rice, garnish with micro shoots and serve immediately.
