Ingredients:
Dough
• 1 cup whole wheat flour (chapatti atta)
• 2 tablespoons ghee (clarified butter)
• 1/2 teaspoon salt
• About 1/3 cup lukewarm water
Filling
• 3/4 cup sattu, flour of roasted chana dal, available in Indian grocery stores
• 1/2 teaspoon salt (adjust to taste)
• 1/8 teaspoon asafetida (hing)
• 1/8 teaspoon turmeric (haldi)
• 1/2 teaspoon red chili powder
• 1 teaspoon mango powder (amchoor)
• 1 teaspoon grated ginger
• 1 tablespoon finely chopped green chili (adjust to taste)
• 1 teaspoon ghee (clarified butter)
• About ¼ cup water
Potato, and Tomato Chokha
• 1 medium size potato boiled peeled and roughly mashed, this will make about 1 cup mash potato
• 2 medium size tomato’s roasted peeled and mashed, I have roasted them over the skillet
• Spices we will use half and half to make both Potato and Tomato Chokha
• 1 teaspoon salt
• 1/4 teaspoon black pepper
• 1 teaspoon lemon juice, just for Potato Chokha
• 2 teaspoons grated ginger
• 2 tablespoons finely chopped green chilies
• 2 tablespoons finely chopped cilantro
• 2 tablespoons olive oil or mustard oil, I prefer olive oil
