In a greased pan add your onion and garlic pate and allow to cook down. Add in ½ a cup of chickpeas until they slightly start to brown. Add in your mac and cheese sauce. Add a splash of ramen stock. Add in your black beans, squeeze in lemon and add salt and pepper to taste. Toss in your lemon scrap for extra flavor.Place a sweet potato in oven at 400 degrees Fahrenheit for 45 minutes or until super tender. Peel the skin off the sweet potato and lightly mash it. Add salt to extract moisture. Now you can completely mash your sweet potato and add in your flour. Carefully fold it in. Do not over mix. Place small scoops of sweet potato into boiling water. Boil for about 3 minutes and remove. Transfer your sweet potato gnocchi to the pan with chickpeas and black beans and serve.
