The creamy coconut flavour is perfect with a lychee and there is something deeply appealing about eating this icecream

LYCHEE COCONUT ICE CREAM

Ingredients

7-8 lychees, peeled and deseeded
¼ cup desiccated coconut
¼ cup milk powder
1 cup fresh cream
1 cup coconut milk
1½ cups milk

Method

1. Blend together lychees, desiccated coconut, milk powder, cream, coconut milk and milk into smooth mixture.
2. Pour in an air-tight container, cover and freeze for 6-8 hours.
3. Scoop out and serve.
