MAC N CHEESE BOWL

Ingredients

4 buns
¼ cup grated mozzarella cheese
50 grams processed cheese
1 tbsp butter
1 tbsp refined flour
¾ cup milk
Salt to taste
Crushed black peppercorns to taste
1½ cups boiled macaroni pasta
¼ medium capsicum, cut into ½ inch cubes
¼ medium red bell pepper, cut into ½ inch cubes
¼ medium yellow bell pepper, cut into ½ inch cubes
¼ cup boiled corn kernels
Chopped fresh coriander leaves for garnish

Method

1. Preheat oven at 180º C.
2. Take buns on a worktop. With a knife cutout a deep cavity in the centre.
3. Melt butter in a non-stick pan. Add refined flour and make a light roux, stirring continuously.
4. Add milk and mix well. Cook till the mixture boils, stirring continuously.
5. Add cheese and mix well. Cook for a minute on medium heat, stirring continuously.
6. Add salt, black peppercorns and mix well. Cook for a minute on medium heat.
7. Add pasta and mix well. Add capsicum, red bell pepper, yellow bell pepper and corn kernels. Mix well and cook for 2-3 minutes on medium heat till mixture turns creamy.
8. Take buns on a baking tray. Fill the cavity with the prepared mixture. Grate and add processed cheese. Bake in a preheated oven for 2-3 minutes or till cheese melts.
9. Tarnsfer on a serving plate. Garnish with coriander.
10. Serve hot with tomato ketchup.
