Macaroni Upma | Sanjeev Kapoor Khazana

A completely new way of making upma with the classic Macaroni pasta.

MACARONI UPMA

Ingredients

2 cups macaroni pasta, boiled
1 tbsp oil
½ tsp mustard seeds
1 tsp split, skinless black gram
5-6 curry leaves
A pinch of asafoetida
1 medium onion, finely chopped
1 medium tomato, finely chopped
¼ cup blanched green peas
1 small green chilli,chopped
1 tbsp chopped fresh coriander leaves + for garnish
Salt to taste


Method

1. Heat oil in a deep non-stick pan, add mustard seeds and saute till it splutters. Add urad dal, curry leaves, asafoetida and onion. Sauté till it turns golden brown.
2. Add tomato andsauté till it turns pulpy. Add green peasand mix well.
3. Add green chilli and sauté for a minute. Add macaroni pasta and sprinkle little water. Mix well. Add coriander and sprinkle some water. Mix well.Cover and cook on medium heat for 6-7 minutes or till cooked. Add salt and mix well. Sauté for a minute.
4. Serve hot garnished with chopped coriander.
