Mackerel Jollof

MACKEREL JOLLOF

PREP TIME: 10 MINUTES
COOK TIME: 40 MINUTES
SERVES: 4-6

INGREDIENTS
400g canned mackerel / 2 cups mackerel tomato sauce
1 tsp curry powder
2 tbsp cayenne pepper
2 cups chicken stock
2 cups rice, washed

DIRECTIONS
. Separate the mackerel from the tomato sauce and Pour the mackerel tomato sauce into a saucepan over a medium heat.
. Add the curry powder, cayenne pepper, stir and let simmer for 2 minutes then add the rice, stir and let braise for 5 minutes.
. Add the chicken stock, stir then cover to cook for 25 minutes stirring occasionally.
. Add the mackerel, stir in lower the heat and let cook for 15 minutes.
. Mackerel jollof is ready to serve!
