We bring to you this Crispy Maddur vadas all the way from Mysore to take care of your fried-food cravings!MADDUR VADEIngredients1 cup rice flour½ cup refined flour (maida)¼ cup semolina 2 medium onions, peeled3 green chillies1 sprig of curry leavesA handful of coriander leavesSalt to taste2 tbsps white sesame seeds2 tbsps roasted peanuts, crushed2 inch ginger piece, chopped¼ cup oil + for deep fryingCoconut chutney to serveCoffee to serveMethod1. Finely slice onions and finely chop green chillies. Remove the curry leaves from the sprig. Finely chop coriander leaves and transfer them into a large bowl.2. In the same bowl, add salt and rub well into the onion mixture. Add rice flour, refined flour, semolina, white sesame seeds, peanuts and ginger. Mix till well combined.3. Add ¼ cup oil and mix till it forms a dough.4. Take a portion of the prepared mixture and shape it into a ball. Place it on a plastic sheet and cover it with another plastic sheet. Press it to form a thin disc, gently remove and set aside.5. Heat sufficient oil in a kadai, drop in the prepared vades and deep fry on low heat till golden brown and crisp.
