Hi! Todays menu is 100% real shrimp burger.
I had some leftover frying oil after I made some donuts I was wondering what to make
And then I decided to make a shrimp burger, which I love.
I added nothing else in the patties except things that help bind the patties.
I wanted to know what pure shrimp really tastes like.
It really, literally tastes like a real shrimp burger.

I started making it at 9AM, and it was 3PM when I was done.
I got so hungry, I gobbled it up in seconds.

* (8) Burger buns (8 pieces)
400g, 8g, 1, 150ml, 50ml, 5g, 30g
40g, (*), ( 1 )
400g bread flour, 8g instant yeast, 1 egg, 150ml warm water, 50ml warm milk, 5g salt, 30g sugar
40g softened unsalted butter, sesame seeds(*optional), egg wash(1 egg yolk and a little of water)

1. Mix warm water and milk, then add instant dry yeast and set aside.

2. In a large pot, add bread flour, sugar and salt. mix thoroughly.

3. Mix the (2) dry ingredients and (1) wet ingredients thoroughly with a spatula.

4. When the dough is thoroughly mixed, knead it until it forms a ball. Add butter for a smooth bun and knead for 10 minutes.

5. Flour a ball, place the dough in it and proof it for 1~2 hours until it doubles in size.

In hot weather like this, proofing is a breeze.

6. Knead the dough to punch out the air, divide it into eighths (90g each) and form little balls.

7. Place the balls on the oven tray, cover with a wet cloth and proof again for 30 minutes.
