For The Masala Makhana3 1/2 cups lotus seeds (makhana)2 tbsp oil1/2 tsp chilli powder1/2 tsp chaat masala1/4 tsp turmeric powder (haldi)salt to tasteOther Ingredients1 tbsp oil1/4 cup raw peanuts5 tbsp finely chopped onions5 tbsp deseeded and finely chopped tomatoes5 tbsp finely chopped cucumber2 tbsp finely chopped coriander (dhania)1 tsp finely chopped green chillies2 tbsp sweet chutney1 tbsp green chutney1/2 tbsp lemon juicesalt to taste1/4 cup pomegranate seeds (anardana)5 tbsp nylon sevMethodTo roast makhanaHeat 1 tbsp oil in a broad non-stick pan, add the lotus seeds and saut on a medium flame for 4 to 5 minutes. Keep aside.Heat the remaining 1 tbsp oil in the same non-stick pan, add chilli powder, chaat masala, turmeric powder and salt and saut on a medium flame for 10 seconds.Add the roasted makhana, toss well and cook on a medium flame for 2 minutes.
