Creamy, flavourful and so delicious!MALAI CHICKEN CURRYIngredients500 gram chicken legboneless, cut into 1 inch cubes2 tbsps ghee8-10 green cardamoms2 green chillies1 medium onion, quartered2 tbsps melon seeds (magaz)12-15 cashew nuts3-4 garlic clovesSalt to taste¼ cup yogurt½ tsp green cardamom powderCrushed black peppercorns to tasteFresh cream for drizzlingMicro greens for garnish Method1. Heat 1 tbsp ghee in a pressure cooker, add 4-5 green cardamoms, break and add the green chillies. Add onion, melon seeds, cashew nuts, garlic cloves and sauté for 1-2 minutes.2. Add 1 cup water and cover the cooker. Cook till 3-4 whistles are released. Allow the pressure to reduce completely.3. Open the cooker and blend the mixture till smooth.4. For the gravy, heat remaining ghee in a non-stick kadai, add remaining green cardamoms, chicken and salt. Sauté for 2-3 minutes.5. Strain the prepared paste into the kadai and mix well. Add yogurt and adjust salt, mix well and cook for 12-15 minutes or till the chicken is cooked completely.6. Add green cardamom powder, crushed black peppercorns and mix well. Cook for 2-3 minutes and take the pan off the heat.7. Transfer into a serving bowl and drizzle fresh cream on top.
