This fish fry is popular in Maharashtra, crispy on the outside & soft on the inside, you're going to love it!MALVANI FISH FRYIngredients3-4 tbsps malvani masala powder 4 big king fish (surmai) darnesMarinade1½ tbsps garlic paste1 tbsp green chilli paste2 tbsps tamarind pulp½ tsp turmeric powderSalt to taste 1½ tsps red chilli powderCoating½ cup semolina (rawa) for coating¼ cup rice flourSalt to taste¼ tsp red chilli powderA pinch of turmeric powder1 tbsp chopped fresh coriander leavesOil for shallow fryingTo serveOnion wedgesLemon wedgesGreen chutneyMethod1. To make the marinade, put garlic paste on a wide plate. Add green chilli paste, tamarind pulp, malvani masala powder, turmeric powder and salt and mix well.2. Add red chilli powder and 2 tbsps water and mix, place fish darnes and rub the marinade well on each darne and set aside to marinate for 30 minutes.3. To make the coating, spread semolina on a plate, add rice flour and salt and mix well. Add red chilli powder, turmeric powder and coriander leaves and mix. 4. Coat the fish darnes with the semolina mixture on both sides.5. Heat sufficient oil in a tawa, place the fish darnes and shallow fry on both sides till golden brown and crisp. Drain on absorbent paper.6. Place fish fry on a serving plate and serve hot with onion wedges, lemon wedges and green chutney.
