An Indo – Chinese classic, with this recipe of a Manchurian fried rice bowl you will forget all about going to the restaurantMANCHURIAN FRIED RICE BOWLIngredientsManchurian1 cup grated cauliflower1 small carrot, finely chopped1 cup grated cabbageSalt to taste1-2 green chillies, chopped1½ tsps finely chopped ginger¼ tsp white peppercorn powder¼ tsp soy sauce2 tbsps refined flour2 tbsps corn flourOil for deep frying Gravy1 tbsp oil1 spring onion bulb, chopped1-2 green chillies, chopped2 tsps finely chopped garlic1 tsp finely chopped ginger1 tsp finely chopped celery stalk2 tsps soy sauce1½ tsps red chilli sauce2 cups vegetable stockSalt to tasteCrushed black peppercorns to taste3 tbsps corn flour slurry1-2 spring onion greens, finely choppedRice2 cups cooked basmati rice1½ tbsps. oil2-3 spring onion bulbs, chopped2 tsps finely chopped garlic1 tsp finely chopped ginger1 medium carrot, cut into small cubes6-7 French beans, choppedSalt to tasteCrushed black peppercorns to taste¼ tsp dark soy sauce¼ tsp vinegar1-2 spring onion greens, finely choppedSpring onion green curls for garnishMethod1. Take cauliflower in a large bowl, add carrot, grated cabbage, salt and mix well. Set aside for 10 minutes.2. Take a muslin cloth in another bowl, add the vegetable mixture into it and squeeze out the excess water.3. Transfer the squeezed vegetable into another large bowl, add green chillies, ginger and adjust salt. Add white peppercorn powder, soy sauce, refined flour, corn starch and mix till well combined.4. For making Manchurian, divide the prepared mixture into equal portions and shape each portion into a ball.5. Heat sufficient oil in a wok, deep fry the prepared Manchurian balls till golden brown and crisp. Drain on an absorbent paper. 6. For the gravy, heat oil in a non-stick wok, add spring onion bulb, green chillies and chopped garlic and ginger, celery and sauté well.7. Add soy sauce, red chilli sauce and vegetable stock, mix well.8. Add salt, crushed black peppercorns and mix well. Allow the mixture to come to a boil.9. Add corn flour slurry and mix well. Cook till the gravy thickens. 10. Add the prepared Manchurian balls and mix, cook for 5-7 minutes.11. Add chopped spring onion greens into the Manchurian gravy and mix well. Take the pan off the heat.12. Meanwhile, heat oil in another non-stick wok to make fried rice. Add spring onion bulbs, garlic, ginger and sauté well.13. Add carrot, French beans and sauté on high heat for 2-3 minutes. 14. Add rice and toss till well combined, add salt, crushed back peppercorns, soy sauce, and toss well.15. Add vinegar, spring onion greens and take the pan off the heat.16. For serving, transfer the rice into a serving bowl and pour the prepared Manchurian gravy on top.
