A delicious kadhi made using the flavourful mango!MANGO KADHIIngredients1 cup yogurt2 tbsps Tata Sampann Fine Besan¾ cup fresh alphanso mango puree½ tsp turmeric powder¼ tsp red chilli powderSalt to taste1 tbsp oil1 tsp mustard seeds¼ tsp asafoetida (hing)1 tsp finely chopped ginger2-3 dried red chilliesSteamed rice to servePakoda1 cup fenugreek leaves (methi), choppedSalt to taste¼ tsp turmeric powder½ tsp red chilli powder1 tsp coriander powder½ tsp cumin powder¼ tsp asafoetida (hing)¾ cup Tata Sampann Fine BesanA pinch of baking sodaOil for deep fryingMethod1. For the kadhi, add yogurt and Tata Sampann Fine Besan in a large bowl. Whisk till well combined and lumps free.2. Add mango puree, turmeric powder, red chilli powder and salt. Mix well. Add 3 cups water and whisk well.3. Heat oil in a non-stick deep pan, add mustard seeds and let them splutter. Add asafoetida, ginger, dried red chillies and sauté well.4. Add the prepared yogurt mixture, ½ cup water and mix well. Cook on low heat for 8-10 minutes.5. For the pakode, add fenugreek leaves, salt, turmeric powder, red chilli powder, coriander powder, cumin powder, asafoetida and Tata Sampann Fine Besan. 6. Add 2-3 tbsps water and mix well. Add 1-2 tbsps water and baking soda. Mix well 7. Heat sufficient oil in a kadai, drop in small portions of the prepared mixture into it and deep fry till golden and crisp. Drain on an absorbent paper.8. For serving, pour the prepared kadhi in a serving bowl and place the pakode on it. Serve hot with steamed rice.
