Yummy sheera infused with the delicious flavours of mango.MANGO KESARIIngredients3 medium lal baug mangoes, cut into small cubes½ cup semolina (rawa)3 tbsps ghee8-10 cashew nuts, halved10-12 raisins10-12 strands of saffron + for garnish⅓ cup sugar ¼ tsp green cardamom powderSlivered almonds for garnishSlivered pistachios for garnishMethod1. Heat ghee in a non-stick kadai, add rawa, cashew nuts, raisins, and sauté till fragrant.2. Add saffron and mix well. Sauté till the rawa turns golden brown.3. Add mango pieces, and mix well for 1-2 minutes. Add 1½ cups hot water and continuously stir to avoid any lumps.4. Cover and cook till the moisture evaporates. Add sugar and mix well, cook for 5-10 minutes or till the sugar dissolves completely.5. Add green cardamom powder and mix well. Take it off the heat.6. Garnish with slivered almonds, slivered pistachios and saffron.
