Mango kulfi is a variation to the basic kulfi, an Indian ice cream. This is a instant kulfi made with fresh mangoes, condensed milk, cream, saffron and cardamom powder.

Traditionally kulfi was made by simmering milk & sugar until it evaporates and thickens to 1/3 rd of the original quantity. There are a few different kinds of kulfi that are available in India. Mango kulfi is one of them.

Making it the traditional way is a tedious process. This no cook kulfi recipe can be made under 5 minutes and needs to be freezed until set.

Make sure sweet and ripe mangoes are used in this recipe. This recipe works well with any condensed milk and cream. Fresh cream, homemade malai or whipping cream can be used in this recipe. The higher the amount of fats used the lesser the ice crystals.

Choose mangoes that are pulpy as this reduces the formation on ice crystals.

I have also used pistachios, they can be replaced with almonds or cashews. But pistas and mangoes make a great combo.

Condensed milk can be replaced with evaporated milk and sugar.
