Mangodi Aur Papad Ki Sabzi | Sanjeev Kapoor Khazana

MANGODI AUR PAPAD KI SABZI

Ingredients

1 cup mangodi
3-4 small papads
1½ tbsps oil
1 tsp cumin seeds
½ tsp mustard seeds
1 small onion, chopped
½ inch ginger, finely chopped
1 tsp finely chopped garlic
1 medium tomato, chopped
½ tsp turmeric powder
Salt to taste
2 tsps red chilli powder
½ tbsp coriander powder
1 tsp Tata Sampann Garam Masala
Coriander leaves for garnish

Method

1. Heat oil in a non-stick pan, Add cumin and mustard seeds and let them splutter.
2. Add onion and sauté well. Add ginger and garlic, sauté till onion turns golden brown.
3. Add tomato, sauté well. Add turmeric powder and salt, mix well, cover and cook till the mixture becomes pulpy.
4. Add mangodi and mix well. Cover and cook for 5 minutes.
5. Break and add the papads into the pan. Add 1 cup water and mix well. Cook for 2-3 minutes.
6. Add Tata Sampann Garam Masala and mix well. Cover and cook for 1 minute, take it off the heat.
7. Garnish with coriander leaves and serve hot.
