Maple Bacon Brownies Recipe - Glen And Friends CookingToday in the kitchen Glen cooks brownies... but he's testing out ideas and not really working from a recipe. Sorta riffing on Maple Brownies, Bacon Brownies, Coffee Brownies, all rolled into one. With some chilli chocolate.Ingredients:8 slices bacon, finely chopped30 mL (2 Tbsp) maple syrup3 eggs125 mL ( cup) sugar125 mL ( cup) maple sugar (or brown sugar)175 mL ( cup) butter, cubed180g (6 oz) dark chocolate, chopped175 mL ( cup) flour60 mL ( cup) cocoa powder5 mL (1 tsp) chilli powder5 mL (1 tsp) salt10 mL (2 tsp) instant coffeeMethod:Preheat oven to 180C (350F), and prep a 9x9 baking pan with butter and a parchment sling.Fry the bacon in a pan untilit just starts to crisp, then pour in the maple syrup, and fry until the maple syrup thickens. Remove from heat, spread on a plate and let cool.In the bowl of a stand mixer, whip the eggs thickened and fluffy.Whip in the sugar.Melt the butter and chocolate together, and let cool slightly.In a small bowl, combine the flour, cocoa powder, chilli powder, and instant coffee.Fold the slightly cooled chocolate mixture into the egg mixture.Stir in the bacon, and the dry ingredients. Pour the mixture into the baking pan and gently spread to level the surface.Bakefor 15 - 20 minutes.
