Maple Ginger Roasted Carrots | Healthy AF | Tastemade

These carrots roasted in a maple and ginger citrus sauce are an easy and impressive addition to any meal.

INGREDIENTS

10-12 whole unpeeled carrots, sliced lengthwise
1 tbsp. coconut oil
1 tbsp. orange juice
1/4 cup pure maple syrup
1 tsp. fresh ginger, grated
1/8 tsp. kosher salt

RECIPE

Preheat oven to 400 degrees and line a sheet pan with parchment paper.

Arrange carrots on sheet pan.

Add the coconut oil, orange juice, syrup, fresh ginger, and kosher salt. Toss to coat.

Roast in oven for 30-35 minutes, until golden and tender.
