The Marinated Bell Peppers Open Burger reminds one of the good old farm days, with its creamy and herby topping interspersed with fresh juicy bell peppers. It is the perfect choice for a garden party, or just about any day for that matter.Preparation Time: 5 minutes. Cooking Time: Nil. Baking Temperature: 200°C (400°F). Baking Time: 13 to 15 minutes. Makes 4 open burgers. 2 burger bunsButter for spreadingTo be mixed together for the parsley cream cheese2 tbsp finely chopped parsley½ cup mayonnaise¾ cup grated fresh paneer (cottage cheese)2 tbsp finely chopped onions2 tbsp milk1 tsp dry red chilli flakes1 tsp grated garlic (lehsun)½ tsp lemon juiceSalt to tasteTo be mixed together for the marinated peppers¼ cup sliced yellow capsicum ¼ cup sliced green capsicum¼ cup sliced red capsicum1½ tbsp olive oil1 tsp dry red chilli flakes1 tsp dried mixed herbsSalt to taste¼ tsp freshly ground black pepper (kalimirch) ½ tsp lemon juiceFor the garnish4 parsley sprigs1. Divide the parsley cream cheese mixture into 4 equal portions. Keep aside. 2. Divide the marinated peppers mixture into 4 equal portions. Keep aside to marinate for 10 to 15 minutes. 3. Cut each burger horizontally into 2 equal halves. 4. Apply a little butter on all the bun halves and bake in a pre-heated oven at 200°C (400°F) for 8 to 10 minutes.5. Place the baked bun halves on a clean, dry surface with the buttered side facing up.6. Spread a portion of the prepared parsley cream cheese over each bun halve. 7. Finally top with a portion of the prepared marinated pepper.Serve immediately garnished with a parsley sprig.
