A must try !MASALA BUNS Ingredients2 cups + 2 teaspoons refined flour (maida)2 teaspoons fresh yeast2 teaspoons castor sugar1 medium onion, finely chopped1 teaspoon red chilli flakes1 tablespoon finely chopped garlic½ teaspoon garam masala powder½ teaspoon red chilli powder¼ teaspoon turmeric powder1 tablespoon finely chopped fresh coriander leavesSalt to taste ¼ cup milk + for brushing 2 tablespoons oil White sesame seeds for sprinklingBlack sesame seeds for sprinkling Melted butter for brushing Method1. Put yeast in a bowl. Add castor sugar and 2 tablespoons warm water, mix well and set aside to activate. 2. Sift flour in another bowl. Add onion, chilli flakes, garlic, garam masala powder, chilli powder, turmeric powder, coriander leaves, salt, milk and activated yeast and mix well. 3. Add some water and knead. Add 1 tablespoon oil and knead into a soft dough. Cover with a damp muslin cloth and set aside to prove for 10-15 minutes. 4. Preheat oven to 180°C. 5. Knock back the dough, add remaining oil and knead again. Divide into equal portions, shape into balls and transfer on a baking tray. Cover with a damp muslin cloth and set aside to prove for 20-25 minutes. 6. Brush some milk and sprinkle white and black sesame seeds on top of the buns. Put the tray in the preheated oven and bake for 15-20 minutes. 7. Brush some butter on top and serve.
