Masala Doodh | Sanjeev Kapoor Khazana

Masala Doodh - is sweetened flavored milk and is made in the Maharashtrian cuisine. A mix of dry fruits and a few spices are added which makes the final drink aromatic.

MASALA DOODH

Ingredients

1 litre milk
10-15 cashewnuts
10-15 almonds
10-15 pistachios
1 tablespoon pumpkin seeds
5-6 black peppercorns
3 tablespoons dried rose petals
¼ teaspoon green cardamom powder
A pinch nutmeg (jaiphal) powder
A pinch of saffron + for garnishing
5 tablespoons sugar
Sliced almonds for garnishing
Sliced pistachios for garnishing

Method

1. Boil milk in a deep non-stick pan. Reduce heat and simmer, stirring continuously, till the milk reduces and thickens slightly.
2. Grind together cashewnuts, almonds, pistachios, pumpkin seeds, peppercorns, dried rose petals to a coarse powder.
3. Add the ground powder, cardamom powder, nutmeg powder and saffron to the pan, mix well and simmer for 2-3 minutes. Add sugar, mix and simmer for 4-5 minutes.
4. Serve hot garnished with sliced almonds, pistachios and saffron.
