Masala Doodh - is sweetened flavored milk and is made in the Maharashtrian cuisine. A mix of dry fruits and a few spices are added which makes the final drink aromatic.MASALA DOODH Ingredients1 litre milk10-15 cashewnuts10-15 almonds10-15 pistachios1 tablespoon pumpkin seeds5-6 black peppercorns 3 tablespoons dried rose petals¼ teaspoon green cardamom powderA pinch nutmeg (jaiphal) powderA pinch of saffron + for garnishing 5 tablespoons sugarSliced almonds for garnishingSliced pistachios for garnishing Method1. Boil milk in a deep non-stick pan. Reduce heat and simmer, stirring continuously, till the milk reduces and thickens slightly. 2. Grind together cashewnuts, almonds, pistachios, pumpkin seeds, peppercorns, dried rose petals to a coarse powder. 3. Add the ground powder, cardamom powder, nutmeg powder and saffron to the pan, mix well and simmer for 2-3 minutes. Add sugar, mix and simmer for 4-5 minutes.4.
