मसाला जीरू | Masala Jeeru | Sanjeev Kapoor Khazana

A super popular drink made roasted cumin seeds and spices! Topped with chilled drinking soda to make it fizzy and exciting!

MASALA JEERU

Ingredients

¼ cup cumin seeds (jeera)
10-12 black peppercorns, coarsely crushed
3-4 cloves
¾ cup + 1 tsp sugar
½ inch ginger, roughly chopped
Black salt to taste
Salt to taste
¼ tsp + 4 pinches of chaat masala
A pinch of red chilli powder
2 lemon wedges
2 small lemons
Ice cubes as required
Drinking soda as required

Method

1. Heat a nonstick pan. Add cumin seeds and roast on medium heat till they turn dark brown.
2. Remove 1 tbsp cumin seeds and add black peppercorns, cloves and roast for a minute.
3. Add ¾ cup sugar, 1 cup water, ginger and cook till sugar melts and the mixture thickens.
4. Transfer the roasted cumin seeds in a mortar. Add black salt, salt, ¼ tsp chaat masala, red chilli powder and remaining sugar and crush coarsely.
5. Strain the prepared jeera syrup.
6. Apply lemon on the rim of the glass and press onto the prepared spice mix.
7. Add a portion of the prepared syrup in each glass. Add black salt, salt and a pinch of chaat masala in each glass. Squeeze ½ lemon in each glass. Mix well.
8. Add ice and top up with the soda and stir.
9. Serve chilled.
