MASALA RICE DOSA

Ingredients

1½ cups rice flour
2 inch ginger, roughly chopped
5-6 garlic cloves
1 medium onion, quartered
1 tsp cumin seeds
10-15 curry leaves
3-4 green chillies
2 tbsps coriander seeds
3-4 dried red chillies
1 cup scraped fresh coconut
Salt to taste
Oil for drizzling
Coconut chutney to serve

Method

1. Put the ginger in a mixer jar, add garlic, onion, cumin seeds, curry leaves, green chillies, coriander seeds, dried red chillies, coconut and ½ cup water and grind to a fine paste.
2. Take rice flour in a large bowl, add the ground paste and mix well. Add 1 cup water and mix till well combined.
3. Add 1 more cup of water and mix till a lump free and smooth batter is formed. Add another cup of water and mix till a thin batter is formed. Add salt and mix.
4. Heat a non-stick tawa. Pour a ladle full of the batter, taking care that it spreads in a tin, even layer. Drizzle oil and cook for 2-3 minutes. Fold it into half and place it on a serving plate.
5. Serve hot with coconut chutney.
