Creamy mashed potato spread topped with deep fried beetroot wafers. A must try !

MASHED POTATOES WITH BEETROOT WAFERS

Ingredients

2-3 medium potatoes, peeled and cut into quarters
2 medium beetroot, peeled
Oil for deep-frying
2 tsps butter
3-4 tbsps fresh cream
Salt to taste

Method

1. Using a slicer thinly slice beetroots.
2. Heat sufficient oil in a kadai. Deep-fry beetroot slices till crisp. Drain on absorbent paper.
3. Heat sufficient water in a deep non-stick pan. Add potato and cook till soft. Drain, mash well and add to the pan on heat. Add butter, cream and salt and mix well. Cook for a minute or two.
4. Spread mashed potatoes on a serving dish. Insert beetroot wafers in it and serve immediately.
